Iced White Tea with Peach and Almond

Makes 4¼ Cups
Heat for 15 minutes over low heat
Instructions:
- Halve the almonds, pit the peaches and roughly chop them.
- Place in a saucepan with the honey and the water, and heat for 15 minutes over low heat. Remove from the heat.
- Off the heat, add the tea and infuse 8 minutes.
- Strain the mixture through a fine-mesh sieve into a pitcher, set aside to cool, then chill.
- Enjoy the iced tea with a drizzle of lemon juice.
